A touch of lemon juice and some white chocolate chips, and these taste just like lemon meringue pie.
¾ cup butter, softened
1 ½ cups sugar
2 ½ tbsp lemon juice
1 egg
¼ tsp salt
1 tsp vanilla
½ tsp baking powder
¼ tsp baking soda
2 ½ cups flour
1 ½ cups white chocolate chips
Heat the oven to 350°F. Line a cookie sheet with parchment paper and set it aside.
In a large bowl, cream the butter and sugar until light and fluffy. Mix in the lemon juice, vanilla, egg, and salt.
Mix in the baking soda and baking powder, then the flour until just combined. Fold in the white chocolate chips.
Scoop the dough 2 inches apart on the pan and bake 8 to 10 minutes. Let them finish baking on the hot pan for a few minutes, then move them to a cooling rack.
Optional: top with whipped cream for the full meringue pie look, and enjoy.
